All of our maple sap comes straight from our trees, to our sugarhouse, where we boil it with our efficient wood fired evaporator. Once the boiled sap reaches syrup we bottle it right on our farm.

Sustainable

Forestry

The forest on Scrag Mtn is continually evolving, transforming back into a carbon sequestering old growth forest from when much of it was cleared for field and pasture. Our mission is to create a sustainable sugarbush that supplies the sap and firewood for our maple sugaring operation, while following a forestry plan that promotes an old growth forest that is healthy and diverse.

Technology

We strive to make our maple syrup in the most efficient manner possible, leveraging technology to increase our efficiency and yield from our inputs. Our sugarhouse relies heavily on electricity with our vacuum pump and reverse osmosis machine being the two biggest consumers. To combat the power usage we have installed two solar panel arrays along with installing a 'smart' vacuum pump that can dial itself up and down based on the required vacuum draw and setpoint.

To keep vacuum draw low, we have installed a Farmblox vacuum monitoring system on our tubing network to allow us to find and repair leaks as soon as possible.

Our wood fired evaporator is a gasification arch, which uses high powered fans and unique flu design to get every last bit of heat out of the wood we burn to boil our sap to syrup. We burn the same amount of wood as our old standard evaporator, but are able to produce 3x the amount of syrup.
